Cheese maker Louise Talbot…

New Zealand born cheese maker, Louise Talbot, developed a love of good food from an early age, having grown up on the family farm. Says Louise, “New Zealand is a nation of more dairy cows than people!”

Louise was first taught to make cheese more than 20 years ago and went on to train in commercial cheese manufacture. A qualified teacher, Louise combines her passion for cheese and teaching others new skills on her UK-based cheese making classes.

She’s a member of the Specialist Cheese Makers Association, The Guild of Fine Foods and a judge at both the World and Global Cheese Awards and Great Taste Awards.


The Cheese making course…

During this fun hands-on cheese making course, you will be introduced to the science of turning fresh milk into a variety of cheeses. You’ll receive a folder of theory and recipes (and a cheesy pen!).

You’ll make halloumi, ricotta and mozzarella cheese which will be edible right away.

During the day, Louise will demonstrate butter and mascarpone making.  You’ll enjoy the delicious freshly made butter on crusty bread for lunch and the mascarpone with a brownie.

No previous cheese making experience is required and the emphasis will be on making cheese in your home using readily available ingredients and limited equipment.

The class is suitable for vegetarians as you will be using vegetarian rennet.

At the end of the day…

You will leave the course with a selection of the cheeses made and with the skills and knowledge to make a wide variety of other cheeses at home. Cheese making kits (£30) will be available for purchase too.

The day is fun and educational immersion in to all things cheese and dairy.

There’ll even be a cheese quiz with a suitable prize!
