Course Overview

Cheese-making with Louise Talbot – Feta, Camembert and Edam…

During the second of our hands-on artisan cheese-making classes, run by cheese expert, Louise Talbot, you will learn how to make your own camembert, feta, Edam and Labneh (a creamy, tangy Middle Eastern yogurt strained until extra thick), leaving with two camemberts, a block of feta and Edam boule to mature at home.

Developing your Cheese

Over the next couple of weeks you will delight in seeing the lovely furry white coat develop on your camemberts, immerse your feta in a salty brine and develop your Edam. These are both excellent recipes and perfect cheese for entertaining and gifts! 

Louise will also demo how to make Boursin blue cheese spread using labneh, which students can enjoy for lunch along with some freshly baked bread. 

This is an intensive course, building on the skills you will have learnt on Cheese Making Part I and expanding your cheese repertoire. If you already have basic cheese making experience you could also book onto this course.

 

Cheese maker Louise Talbot…

New Zealand born cheese maker, Louise Talbot, developed a love of good food from an early age, having grown up on the family farm. Says Louise, “New Zealand is a nation of more dairy cows than people!”

Louise was first taught to make cheese more than 20 years ago and went on to train in commercial cheese manufacture. A qualified teacher, Louise combines her passion for cheese and teaching others new skills on her UK-based cheese making classes.

She’s a member of the Specialist Cheese Makers AssociationThe Guild of Fine Foods and a judge at both the World and Global Cheese Awards and Great Taste Awards.
