Course Overview

One Day Chocolate Workshop

One whole day working with and, yes, eating chocolate!

We’ll start the day with an introductory chat with chef over coffee and biscuits. Then it’s on to the star of the show – chocolate.

Melting and Tempering

First off is tempering. We temper chocolate in order to give it that characteristic ‘snap’ and shine and to prevent it melting so readily in the hand. It’s all about aligning the crystals in a particular way and is quite an art to master – a task that we make seem easy and stress-free.

You’ll be making all manner of delicious things

After tempering your chocolate you’ll make all manner of chocolaty delights. These are some examples of the kind of thing you’ll be making:

  • Chocolate shapes for decorating cakes and desserts
  • Tubes as containers for ganache and mousses
  • Ganache
  • Dark or white chocolate soufflé
  • Chocolate chip biscuits
  • Chocolate cake
  • Brownies

 

Lunch, then more chocolate!

Lunch will be a delicious buffet with a dessert you’ve made as part of the course.

In the afternoon you’ll continue to make more chocolate creations before the course finishes at 4.30pm at which time you’ll be given your chocolate masterpieces to take home with you.

Regular refreshment breaks and take home what you’ve made

The day will be interspersed with tea, coffee and biscuit breaks and there will be able to sit at the worktop while you work.

You’ll learn all about the different kinds of chocolate and what they’re used for and how they are worked in different ways.
