ONE DAY COURSE (9.30am - 4.30pm)

Your one day classic French dessert cooking course covers some of those timeless classics found in eateries across France.

At the top of the list have to be the three mainstays of any French chef or home cook: Crème Brulee, Tarte au Citron, and Tarte Tatin. Which is great news, because they’re among our chef’s favourites too!

Jim will take you through all the steps needed to create these desserts from scratch.

Lunch will be a buffet of regional specialities as well as one of the desserts you prepared and cooked that morning.

At the end of the day you’ll be amazed at how much you’ve achieved and you'll get to take home what you cooked during the day.

Techniques learnt:

  • Making Shortcrust pastry
  • Blind baking
  • Creme Anglaise – a tricky thing to get right, but Chef has a trick up his sleeve.
  • Lemon curd
  • Folding and mixing
  • Making Caramel
  • Baking in a bain marie
  • Using a blowtorch
  • Cook-ahead methods

You will make:

  • Creme Brulee
  • Tarte au Citron
  • Tarte Tatin
